So my cold came back last night….not happy. Why do colds always seem to do that?
But none the less, I had things to do tonight. I had to babysit right after work, then go to the grocery store, then bake a gluten free cake for the first time.
Tomorrow is my friend Vanessa’s birthday! She’s doing her PhD in the lab across the hall from me. She was my first work friend, and she’s my lunch buddy! Another girl in her lab can’t eat gluten, and every time it’s someone’s birthday (because we always have cake) she has no choice but to just watch us all enjoy it. Vanessa always feels bad. She gives her the fruit off her cake and offers her the cheese cake part of the cheese cake (because she can’t eat the crust). So I figured that what would make Vanessa the most happy on her birthday was if her friend could eat the cake.
So I decided to bake a Gluten Free Cake. And this is the end result:

Sounds Gross Right? But it’s oh so good!
